This original, mimosa recipe was a result of much experimentation and several bottles of champagne were sacrificed in the name of research. Not all attempts were a success but none went to waste! Finally we found the perfect mixture. We knew we wanted to marry a tart berry flavor with a sweet floral. When we saw the organic cardamom-clove syrup by Royal Rose, we knew the warmth of those flavors would bring it all together. A perfect blend of tart, sweet and spice for the Winter Holidays! For this recipe you will need a Gallon Pitcher to mix it all in.
12.5 oz Pomegranate Juice
Pomegranate juice can be found in the juice aisle or the refrigerated juice section of your local supermarket. It's a good source of vitamin C and one that Santa loves to drink during his long journey around the world to stay hydrated.
12.5 oz Cranberry Juice
There are a lot of health benefits to drinking cranberry juice. It's packed with antioxidants, which help reduce inflammation and free radicals in your body, making it easier for you to maintain good health. These properties make this cocktail one healthy drink! (not really)
4 oz of Elderflower Liqueur
St. Germain is a popular elderflower liqueur brand that we like to use.
5 teaspoons organic Cardamom/Clove Syrup
Cardamom Clove Simple Syrup is very easy to make.
1 cup Demerara Sugar, 1 Cup of Water, 2 Tbsp Whole Cloves, 1/4 cup Green Cardamom Pods
In a medium saucepan bring Water, Cloves and Cardamom Pods to a strong simmer. Stir in sugar until sugar is completely dissolved. Reduce heat, cover and simmer for 10 minutes. Let the syrup come to room temperature. Once it cools, place it in an airtight container in the refrigerator to infuse for 1-3 days. Strain out the cardamom and clove pods when you bottle the syrup. Keep refrigerated and use within 3 weeks.

5 teaspoons of organic lemon juice
Squeeze fresh or straight out of the lemon juice bottle. We don’t judge!!
25oz (one 750 ml bottle) Champagne or Sparking Wine
When it comes to champagne or sparkling wine, you can’t go wrong with either of these options. We prefer a dry or brut sparkling wine to allow the flavors to shine. However, If you're desperate then Prosecco will do the trick. Be aware that Prosecco will make the mimosa sweeter.
Fresh sugared cranberries and rosemary sprigs for garnish
Sugar is optional.
*Pro-tip! Mix the juices and syrups together the night before in the pitcher. Throw in some washed cranberries and rosemary sprigs to let sit in the refrigerator over night. The next morning, the rosemary will have infused into the juices as well adding a beautifully, fragrant layer to the mixer! Pour the champagne right on top when your guests arrive. Cheers 🥂
